Bulking Up Your Breakfast

Breakfast is called "the most important meal of the day", yet many of us eat an inadequate morning meal or skip it altogether. Perhaps you are pressed for time or don't care for the usual quick breakfast fare. Tired of cereal, toast, and packaged yogurt, but are at a loss when it comes to thinking of something better to try? Check out these quick, innovative breakfast recipes to get you going in the morning.

Breakfast Tacos

Breakfast tacos are fast, easy, and cheap to make. What more could you ask for? For a simple breakfast taco, scramble one or two eggs and pan-fry (or microwave) a few strips of bacon or ham, then wrap in a tortilla warmed on the stove. A slice of avocado adds flavor and texture and makes for a delicious combination. For a Tex-Mex twist, top your tortilla with a spoonful of your favorite salsa.

Smoothies

It's hard to think of a breakfast that is faster and easier to transport than a smoothie. Gather together a few pieces of fruit, a half cup of yogurt or milk, a half cup of ice, and blend together. You can add almost anything to a smoothie, including cereal, berries, peanut butter, honey, chocolate, and more. Get creative and make up your own recipe by blending together your favorite ingredients.

Loaded Waffles

A waffle maker allows you to make a delicious breakfast on the fly. Find a waffle mix that you like to create the batter, ladle a spoonful onto the waffle maker, then mix in some fruit chunks, raisins, or chocolate chips. Most waffle makers beep when the waffle is done, so while they are cooking you can make your coffee or finish putting on your shoes if you're in a hurry. When the timer goes off, you'll have a perfectly cooked waffle with your favorite ingredients mixed in. Top with syrup or wrap in a paper towel and take it to go.
