Crispix Puppy Chow
Ingredients required:
1. Crispix cereal 12 oz. box
2. Butter 1/2 cup
3. Peanut butter1 cup
4. Chocolate chips 12 oz. pkg.
5. Powdered sugar2 to 3 cups
Method:
Mix peanut butter, butter and chocolate chips in a medium sized bowl that is microwave safe. Microwave the mixture on high heat for 2 or 3 minutes. Stir through the mixture once and cook it till the mixture is totally melted and creamy. Empty the cereal to another bowl and pour the melted mixture on top of the cereal. Stir it till the cereal is well coated with the mixture. Fill a plastic food bag with powdered sugar and add the well coated cereal to the food bag. Shake it well till the cereal is coated with sugar. Spread the done cereal on to a wax paper. When it is dried and well cooled it can be stored in tight containers.
2. Crunchy Peanut Butter Puppy Chow is another popular Puppy Chow recipe.
The items required for the recipe are:
1. Crunchy peanut butter1 (18 oz.) jar
2. Chocolate chips 12 oz.
3. 1 Stick butter
4. 1 large box of Crispex cereal
5 1 box of powdered sugar
Microwave butter mix, chocolate cereal and peanut butter in a microwave friendly dish till the contents are melted. Empty the large box of Crispex on to it and mix it well. Take a large paper bag and put powdered sugar and shake it thoroughly till every thing is well mixed and coated. If you find them too sticky you can add some more powdered sugar in to it. When it is cool it can be stored in airtight containers for your little ones to munch.
3. Sweet Minglers Recipe
The ingredients needed for this yummy dish are:
1/4 cup peanut butter, 1 pkg. or 1 cup semisweet chocolate chips, 1/2 cup dry roasted peanuts- optional, 1 cup powdered sugar and 6 cups Crispix cereal.
You can assemble this delicacy in the wink of an eye!
Put chocolate to melt on low heat, and make sure it is well melted. Take the pan off and mix peanuts and peanut butter in to the melted chocolate. Empty the mixture on to the cereal and stir till the cereal is well coated with the mixture. Take powdered sugar in a big plastic bag, put in the cereal and close the bag. Toss the bag in a gentle fashion till the contents are well coated. This lip smacking dish can be stored in the fridge in air tight containers.

Zucchini Baking Recipes

It always seems like if you plant even one zucchini plant, you have enough zucchini to feed a very large family plus the neighbors. So, of course, there is then the question of what to do with all of that zucchini. It always amazes me that zucchini can taste so good in baked goods. Hope you enjoy these two baking recipes for zucchini!
Zucchini Granola Cookies
3/4 cup butter or margarine (softened)
1 1/2 cups brown sugar
1 egg
1 teaspoon vanilla
grated rind of 1 orange
3 cups grated, unpeeled zucchini
3 to 3 1/2 cups flour
1 teaspoon baking soda
1 cup butterscotch or chocolate chips
3 cups granola cereal
In a large bowl, mix together the butter and sugar. Mix in the egg, vanilla, orange rind, and zucchini. Add in the flour and baking soda. Mix in the granola cereal. Then mix in the butterscotch or chocolate chips. Grease a cookie sheet and put teaspoonfuls of the dough onto the sheet. Bake in a 350 degree oven for 12 to 15 minutes.
Chocolate Zucchini Bread
1 cup brown sugar
1 cup sugar
1/2 cup margarine
1/2 cup oil
3 eggs
1 teaspoon vanilla
3/4 cup buttermilk
3 cups flour
1 teaspoon cinnamon
1/2 teaspoon salt
2 1/4 teaspoons baking soda
5 tablespoons cocoa
2 1/2 cups grated zucchini
1/2 cup milk chocolate chips
1/2 cup raisins
1/2 cup chopped nuts (optional)
In a large bowl, mix the sugars, oil, and margarine together. Add the egg into the mixture one at a time. Mix in the buttermilk and vanilla. In a small bowl, sift together the flour, cinnamon, salt, baking soda, and cocoa. Add in the zucchini and dry mixture by alternating. Add in the chocolate chips, raisins, and nuts. Grease a 9x13-inch pan and pour the batter into it. Bake in a 350 degree oven for 1 hour.

Or maybe you enjoy gathering your children in the kitchen for a baking session on a rainy day. Then again, maybe you just have a cookie monster in your house who constantly empties your cookie jar. Here are a couple of recipes you need to try. The Golf Balls don't even need to bake; now how easy is that. The Angel Crisps are dipped in water and sugar before baking for a different effect.
CALIFORNIA GOLF BALL COOKIES
2 cups creamy peanut butter
2 cups crispy riced cereal
6-oz chocolate chips
1/2 bar paraffin
2 cups powdered sugar
1/2 cup soft butter
6-oz butterscotch chips
In a mixing bowl, mix together the peanut butter, cereal, powdered sugar, and soft butter. Shape mixture into balls. In a heavy saucepan, melt the paraffin, chocolate chips, and butterscotch chips. Dip the balls into the warm paraffin sauce and place on a cookie sheet covered with waxed paper. Refrigerate to set.
ANGEL CRISP COOKIES
1/2 cup granulated sugar
1/2 cup brown sugar
1 cup shortening
1 egg
1 tsp vanilla
2 cups all-purpose flour
1/2 tsp salt
1 tsp baking soda
1 tsp cream of tartar
water for dipping
sugar for dipping
In a medium size mixing bowl, cream together the sugars, shortening, egg, and vanilla. Sift the dry ingredients together and add to the creamed mixture. Mix well. Form into walnut-sized balls. Dip top half of each ball into water then into sugar. Place on greased baking sheet and press down in the center with your finger. Bake at 400 degrees for 10 to 20 minutes or until lightly browned and crispy.

The Recipes of Ghana

The Republic of Ghana whose name means 'The Warrior King' was inhabited in pre-colonial times by a number of ancient kingdoms, including the Ga Adangbes on the eastern coast, the inland Empire of the Ashanti and various Fante states along the coast and inland.
Ghana is agriculturally a very productive country and is the world's third largest producer of cocoa. Fishing is also a major part of the economy and many Ghanaian dishes are based on fish. Local plants such as bananas, avocados, grapefruits, mangos, papayas, coconut and plantains are also highly prized and used in the country's cuisines. Chillies are also an important component of Ghanaian cuisine and provides significant vitamin C in the diet. Another feature of Ghanaian cookery is the use of boiled eggs as a garnish.
Here are two traditional Ghanaian recipes for your enjoyment:
Steamed Black-eyed Bean Dumplings
Ingredients:
300g black-eyed beans
1 tbsp tomato paste
1/2 tsp salt
1 tbsp ground crayfish or prawns optional
1 Maggi cube
1 onion, finely chopped
2 hot chillies eg Scotch Bonnet
120ml groundnut oil
1/2 tsp curry powder
Method:
To prepare the black-eyed beans: Soak the beans over night. Drain the beans then, the following day crush lightly with a rolling pin or potato masher to loosen the skins. Rub the beans firmly between your hands to slough the skins off. Add to a pot along with plenty of water. Swirl to loosen the skins and allow them to rise to the top of the water. Add more water and simply allow the skins to drain away. Continue rubbing the beans and raising the skins away until all the skins have gone.
Combine the beans, onion, tomato paste, chillies and the salt in a pestle and mortar or food processor and pound to a smooth paste. Add the powdered prawns if using, curry powder and the Maggi cube then mix in the bean paste. Wrap 2 tbsp of the mixture in banana leaves, corn husks or greaseproof paper. Tie each parcel securely and place in a steamer. Steam over boiling water for about 45 minutes, or until the dumplings are firm and hold together.
Tomato and Okra with Sliced Eggs
Ingredients:
120ml groundnut oil
4 tomatoes, chopped
300g okra, stemmed and sliced into rings
650g cooked rice
1 onion, chopped
1/2 tsp hot chilli powder
salt, to taste
4 hard-boiled eggs, peeled
Method:
Heat the oil in a frying pan or skillet then add the onion, tomatoes, okra and chilli powder. Season with salt then bring to a boil, reduce to a simmer and cook for 15 minutes, stirring occasionally add a little water if necessary.
To serve, place 1/4 of the cooked rice on a plate, spoon the sauce over the rice then top with a boiled egg halved lengthways.
It is almost impossible to give the true culinary flavour of an entire country in just two recipes. But I hope that your curiosity is piques sufficiently for you to explore Ghanaian cookery further.

Famous Sicilian Food Recipes

If you like good food, Sicilian cuisine is well worth knowing about. Sicily is famed for its seafood. Finnochio con sarde, or fennel with sardines, is popular. Grilled swordfish is typical and small fish like red snappers are often cooked in a sweet vinegar sauce. Cuttlefish is served in its own black sauce, with pasta on the side.
An eggplant, olive, celery and caper salad called caponata is very popular as an appetizer in Sicily and there is also a version of this dish using artichoke instead of eggplant. Panella is a fried paste made from powdered or crushed garbanzo beans. You can also make maccu, a Sicilian soup recipe, with garbanzo beans. Arancine are meat or cheese stuffed rice balls, which are then fried.
Meat is very popular in Sicily, especially goat and lamb. Veal marsala is a famous Sicilian recipe and you can use chicken instead of veal for a similar result. Veal spleen sandwiches are also typically Sicilian, but these do not sound quite so tempting!
Delicious Sicilian Pizza
Sicilian pizza is a type of pizza from Palermo in Sicily. With Sicilian pizza, or sfinciuni as it is called in the Sicilian language, the cheese goes under the toppings, rather than on top. An authentic Sicilian pizza recipe will feature chopped anchovies and pecorino cheese. Focaccia alla messinese is a variety of pizza from Messina in Sicily and this is topped with anchovies and endive.
A Sicilian pizza in the United States is normally square and has a deep dough. This kind of pizza is also known as tomato pie. It is popular in Italian-American parts of New Jersey and New York, especially Utica, New York, where most of the large Italian-American population is Sicilian. Tomato pie is often served in an aluminum baking sheet.
Sicilian Gelato and Other Desserts
Cassata is a sugary cake with a sweetened ricotta filling. Cannoli are tubular crusts with the same filling. Ricotta in Sicily is made from sheep's milk so it has a different taste from the ricotta available in the United States.
Sicilian style gelato is an intense flavored ice cream recipe which is made simply with milk, sugar, cornstarch and flavoring. The following recipe for Sicilian chocolate gelato serves six people and you will need an ice cream maker to make it.
Chocolate Gelato Sicilian Style
You will need:
4 oz roughly chopped bittersweet chocolate
2 tablespoons cornstarch
3/4 cup sugar
3 cups whole milk
How to make it:
Warm 2 cups of the milk over a medium heat and remove it from the heat when it starts to simmer. Add the chocolate and stir until it melts. Mix together the cornstarch, sugar and the rest of the milk, and then pour this mixture into the hot milk and chocolate mixture.
Bring the pan to a slow simmer and cook, stirring all the time, until the mixture is thick. This will take about 10 minutes. Let the mixture cool to room temperature, then put it into a bowl, cover it and refrigerate it overnight. Process it in an ice cream maker according to the manufacturer's instructions.

Acai Berry Recipes Inspired by the Rachael Ray Show

I just saw the Rachel Ray acai berry show, and since Rachel Ray has such spectacular recipe ideas, I was a little disappointed that she didn't try to incorporate acai berry juice into a fun recipe. Since then I have tried a number of acai juices, which are fine on their own, but I thought that it was time that I try to experiment and see if I could create some interesting recipes using this new superfood.
The first thing I tried was an acai berry juice marinade on chicken breast. This is just a variation of an orange juice and white pepper marinade I picked up in Nicaragua or the lime juice and soy marinade I had been using for years. I should note that I always marinade for at least six hours as any less time doesn't do much for me.
I cut the chicken breast into strips and pour acai juice and some extra virgin cold pressed olive oil over the pieces. In an effort to cut the sweetness, I added some sea salt and crushed capers. The result was interesting and got fairly good reviews. I didn't like it as much as my stand by marinades so I won't be likely to repeat this recipe. Also I ended up tossing much of the acai goodness down the drain which entirely defeats the health benefits of acai berry juice. Additionally, acai is more expensive than lime juice or orange juice so it was a slightly expensive experiment.
So my next recipe was a variation on another favorite of mine, and I hoped it would turn out better than the chicken experiment. In fact it did meet with very positive reviews. This is my own version of acai berry frozen yogurt. Mix the juice with a non-flavored low fat yogurt. Then set a strainer and cheese cloth in a bowl, pour through the yogurt, put it in the fridge and let it drain through the yogurt for a day. Once the yogurt has drained, you are left with a cream cheese like mixture, which in fact is quite good as a spread or dip at this point.
I pealed the acai/yogurt mixture off the cheese cloth and into some Tupperware. I then froze the mixture for 8 hours. It was delicious! It was tangy from the yogurt and had the rich berry taste of acai. The amount of freezing depends on how you like to have your frozen yogurt. I prefer it softer rather than harder and therefore 8 hours worked well for me.
Last but not least, I wanted to make a recipe for the tried and true fruit smoothie, except make it an acai berry special. In a blender add ice, a frozen banana (this makes the smoothy extra creamy by allowing you to add less ice), some plain yogurt, and 3/4 cup of acai juice. If you want to make a great all around breakfast smoothie, add some wheat germ to get a bit of extra fiber and protein.
So my first attempt at acai berry inspired recipes turned out not so bad. I'm happy with two out of three successful recipes for my first attempt. Granted, my acai berry inventions are not nearly as delicious as what I would imagine Rachel Ray could come up with. I'll keep trying though and perhaps I will eventually come up with some amazing recipes to use this amazing super food in.

Traditional Coffee Cake Recipes

As with many other treats, coffee cake has evolved throughout the years. Nowadays, coffee cakes have been combined with a variety of fruits and ingredients, such as sour cream or banana walnut. However, one of the best coffee cake recipes remains to be the traditional cinnamon coffee cake. Here's how to make one.
Before starting with the actual coffee cake recipe, you should first gather the necessary ingredients. These include:
5-6 cups of flour
2 eggs
6 tbsps of butter
2 cups of sugar
3 tsps of cinnamon
4 tsps of bulk yeast
1 tsp of salt
a cup of cooking oil
warm water
Bundt-type cake pan
When you've already gathered the materials, you are now ready to start making your cake using your traditional coffee cake recipe. First, dissolve the yeast in 2 cups of warm water. Let it stay for several minutes. Next, add a cup of sugar, a teaspoon of salt and the cooking oil. Make sure you mix these ingredients well.
The next step is to add the 2 eggs to the mixture. Beat the batter until the eggs are completely blended in. Next, slowly add the flour. Start with a cup of flour and mix it until the texture is smooth. Do this with every cup of flour. When all the flour has been added, stir the mixture until the batter becomes sticky. Then, let the mixture stand for about 20 minutes.
While waiting for the 20 minutes to finish, start on the glaze. The glaze will give the coffee cake the right flavor. Melt 6 tablespoons of butter, and mix the 3 teaspoons of cinnamon and a cup of sugar together.
After the 20 minutes are up, get small portions of the batter. Roll these portions into small balls in between your palms. Dip these balls into the melted butter and cover it with the cinnamon sugar glaze. Next, lubricate the Bundt-type cake pan with a dab of cooking oil. Put the balls onto the lubricated pan. Finally, place the balls into the oven at 350 degrees for approximately 40 minutes.
During this 40 minutes, you can start brewing your coffee, so that you can have it ready by the time the coffee cakes are done.
After 40 minutes, take the pan out of the oven. Arrange the cakes and add some garnishing. You can also stick toothpicks on the cakes or even add icing or syrup. Voila!
